01 - In a medium mixing bowl, combine shredded carrots, red cabbage, celery, and diced cucumber until evenly distributed.
02 - In a small bowl, whisk Buffalo hot sauce with melted unsalted butter until fully incorporated. Pour the sauce over the vegetable mixture and toss to coat all vegetables thoroughly.
03 - Lay one flour tortilla flat and position a cabbage leaf at the center. Spoon an even portion of the Buffalo vegetable mixture onto the cabbage leaf.
04 - Sprinkle crushed tortilla chips for texture. Optionally, add crumbled blue cheese, chopped chives or green onions, and a drizzle of ranch or blue cheese dressing to taste.
