# Directions:

01 - Preheat your oven to 375°F. Lightly grease a baking dish with cooking spray or butter.
02 - In a large mixing bowl, combine chopped cooked shrimp, lump crab meat, mozzarella, cheddar, softened cream cheese, mayonnaise, minced garlic, paprika, salt, and pepper. Mix thoroughly until creamy and evenly blended.
03 - Lay out each flour tortilla on a clean surface. Spread the seafood filling evenly over each tortilla, leaving a small border around the edges. Roll up each tortilla tightly and place seam-side down in the prepared baking dish.
04 - In a skillet over medium heat, melt the butter. Add minced garlic and sauté until fragrant, about 1 minute. Pour in the heavy cream and simmer, stirring occasionally, until slightly thickened and creamy, approximately 3-4 minutes.
05 - Pour the garlic cream sauce evenly over the rolled tortillas in the baking dish. Bake for 15-18 minutes until the sauce is bubbly and the tops of the tortilla bombs are golden brown.
06 - Remove from the oven and sprinkle with chopped fresh parsley. Serve hot while the cheese is melted and creamy.

# Expert Advice:

01 -
  • The creamy seafood filling stays perfectly moist inside while the tortillas get golden and slightly crisp on top
  • They reheat beautifully so you can make them ahead and pop them in the oven when guests arrive
  • The garlic cream sauce ties everything together into something that tastes like it came from a restaurant
02 -
  • Cold cream cheese creates lumps that refuse to blend no matter how long you mix
  • Roll the tortillas tightly or the filling will leak out during baking
  • The sauce continues thickening after it comes off the heat so do not overcook it
03 -
  • Use kitchen shears to chop the shrimp into uniform pieces quickly
  • Let the filling sit for 10 minutes before wrapping so the flavors meld
  • Space the bombs evenly in the dish so the sauce can reach all sides
