One-Pot Green Chili White Beans (Print)

15 - 4 cups low-sodium vegetable broth

# Directions:

01 - Heat olive oil in a large pot over medium heat. Add the diced onion and cook for 3–4 minutes until translucent.
02 - Add minced garlic and diced red bell pepper, sauté for another 2 minutes until fragrant and slightly softened.
03 - Stir in corn kernels and diced zucchini. Cook for 2–3 minutes, mixing well.
04 - Add the drained and rinsed white beans, diced green chilies, cumin, coriander, oregano, smoked paprika, black pepper, and salt. Stir to combine all ingredients.
05 - Pour in the vegetable broth. Bring the mixture to a simmer, then reduce heat to low. Cover and cook for 20 minutes, stirring occasionally to prevent sticking.
06 - Remove the pot from heat and stir in the fresh lime juice. Taste and adjust seasonings as needed. Ladle the stew into bowls and top with desired optional garnishes.
