- Preheat oven to 350°F. Line two baking sheets with parchment paper.
- In a medium bowl, whisk together all-purpose flour, baking soda, and salt until evenly blended.
- In a large bowl, beat softened unsalted butter, light brown sugar, and granulated sugar until the mixture is pale and fluffy, about 2 to 3 minutes.
- Add eggs one at a time, mixing thoroughly after each addition, then stir in pure vanilla extract.
- Gradually mix the dry ingredients into the wet mixture, stirring until just combined.
- If using, gently fold in the mini chocolate chips for additional chocolate flavor.
- Scoop approximately 2 tablespoons of dough, flatten in your palm, place a square of milk chocolate in the center, and fully enclose the chocolate. Roll into a ball.
- Place dough balls 2 inches apart on prepared baking sheets and bake for 10 to 12 minutes, until edges are set yet centers remain soft.
- Allow cookies to cool on the baking sheet for 5 minutes before transferring to a wire rack to cool thoroughly.
