Savory beef, peppers, and cheese melt together in crispy buttered bread for a delicious American comfort dish.

01 - 10 ounces thinly sliced beef steak (ribeye or sirloin preferred)
→ Vegetables
02 - 1 small onion, thinly sliced
03 - 1 small green bell pepper, thinly sliced
04 - 1 small red bell pepper, thinly sliced
→ Bread and Cheese
05 - 8 slices sourdough or Italian bread
06 - 8 slices provolone cheese
07 - 4 tablespoons unsalted butter, softened
→ Seasonings
08 - 1 tablespoon vegetable oil
09 - Salt, to taste
10 - Black pepper, to taste
# Directions:
01 - Heat vegetable oil in a large skillet over medium-high. Add sliced onions and bell peppers; sauté for 3 to 4 minutes until vegetables are soft and lightly caramelized.
02 - Add thinly sliced steak to skillet with vegetables. Season generously with salt and black pepper. Cook, stirring occasionally, for 2 to 3 minutes or until beef is browned and just cooked through. Remove skillet from heat.
03 - Evenly butter one side of each bread slice. Arrange 4 slices butter-side-down and top each with one slice provolone, a quarter of the steak and pepper mixture, and another slice of provolone cheese.
04 - Top with remaining bread slices, butter-side-up, to complete each sandwich.
05 - Wipe out the skillet and heat over medium. Grill sandwiches 2 to 3 minutes per side, pressing gently, until bread is golden brown and cheese fully melted. Work in batches as needed.
06 - Slice sandwiches and serve immediately while warm.
