01 - 1 large cauliflower head, cut into florets
02 - 1 large cucumber, sliced into 0.4 inch rounds
03 - 2 medium carrots, peeled; one cut into sticks, one peeled into thin ribbons
04 - 1 small red bell pepper, sliced into thin strips
05 - 1 small yellow bell pepper, sliced into thin strips
06 - 6 cherry tomatoes
07 - 1 black olive, sliced into thin rounds

08 - 7 oz Greek yogurt or sour cream
09 - 2 tablespoons mayonnaise
10 - 1 tablespoon lemon juice
11 - 2 tablespoons fresh chives or dill, finely chopped
12 - 1 garlic clove, minced
13 - Salt and freshly ground black pepper, to taste
# Directions:
01 - Slice cucumber into 0.4 inch rounds. Cut one carrot into sticks for arms and peel thin ribbons from the second carrot for the scarf. Slice bell peppers into thin strips for hat, buttons, and scarf accents. Slice black olive into thin rounds for eyes and mouth.
02 - Arrange three cauliflower florets vertically in increasing size on a large platter to form the snowman's body. Place cucumber rounds at the base to represent snow. Add carrot sticks as arms and carrot ribbons around the neck as the scarf. Use black olive slices for eyes and mouth, a small piece of carrot for the nose, and bell pepper strips to create the hat and buttons. Surround with cherry tomatoes and remaining vegetables as extra crudités.
03 - In a small bowl, whisk together Greek yogurt, mayonnaise, lemon juice, chopped chives or dill, and minced garlic. Season with salt and pepper to taste.
04 - Place the dip in a small bowl beside or within the platter for dipping. Serve immediately to maintain vegetable crispness.
