# Directions:

01 - Heat olive oil in a large skillet or Dutch oven over medium heat. Add sausage slices and cook for 5 to 7 minutes, turning occasionally, until browned. Remove with a slotted spoon and set aside.
02 - In the same pan, add diced onion, sliced carrots, and celery stalks. Cook for 5 minutes until slightly softened.
03 - Add minced garlic to the pan and cook for 1 minute until fragrant.
04 - Stir in chopped apples and return the browned sausage slices to the pan.
05 - Pour in chicken or vegetable broth, Dijon mustard, apple cider vinegar, dried thyme, salt, and black pepper. Mix well to blend flavors.
06 - Bring to a gentle simmer, cover the pan, and cook for 20 minutes, stirring occasionally, until vegetables are tender and flavors meld.
07 - Taste and adjust salt and pepper as needed. Serve hot, garnished with chopped fresh parsley if desired.
