- In a mixing bowl, blend pumpkin puree, softened cream cheese, Parmesan cheese, brown sugar, cinnamon, nutmeg, salt, and black pepper until the mixture is smooth and uniform.
- Lay a wonton wrapper on a dry, clean surface. Place about 1 teaspoon of the pumpkin filling in the center.
- Moisten the edges with water using a pastry brush or fingertip. Fold the wrapper over the filling to create a triangle, pressing out the air and sealing the edges securely. For a decorative shape, fold the side corners towards each other and seal with a dab of water.
- Continue filling and folding the remaining wonton wrappers in the same manner.
- Pour about 2 inches of vegetable oil into a deep pan or pot and heat to 350°F (175°C).
- Carefully fry wontons in batches for 2 to 3 minutes, turning once, until golden and crisp. Avoid overcrowding the pan to ensure even cooking.
- Remove the fried wontons with a slotted spoon and transfer to paper towels to drain excess oil.
- Arrange wonton bites on a serving platter. Garnish with chopped chives or green onions and serve with sweet chili sauce or soy sauce.
