# Directions:

01 - Combine olive oil, garlic, rosemary, thyme, parsley, lemon zest, lemon juice, salt, and black pepper in a bowl. Coat lamb chops evenly with the mixture, cover, and refrigerate for at least 30 minutes or up to 2 hours to enhance flavor.
02 - Set oven temperature to 425°F (220°C) to prepare for roasting potatoes.
03 - In a mixing bowl, toss halved baby potatoes with olive oil, dried oregano, garlic powder, salt, and black pepper until evenly coated.
04 - Spread the seasoned potatoes in a single layer on a baking sheet. Roast in the preheated oven for 30 to 35 minutes, turning once halfway through, until golden brown and crispy.
05 - Heat a grill pan or skillet over medium-high heat. Remove lamb chops from marinade and pat dry. Sear for 3 to 4 minutes on each side for medium-rare or cook to desired doneness.
06 - Allow lamb chops to rest for 5 minutes after cooking to retain juices.
