01 - 4 slices sturdy sourdough or country bread

02 - 4 oz sharp cheddar cheese, shredded
→ Kimchi
03 - ½ cup well-drained kimchi, chopped
→ Butter
04 - 2 tablespoons unsalted butter, softened
→ Optional Additions
05 - 1 tablespoon sliced green onions
06 - 1 teaspoon toasted sesame seeds
# Directions:
01 - Spread softened butter evenly on one side of each bread slice.
02 - Place two slices of bread, buttered side down, on a clean surface.
03 - Evenly distribute shredded sharp cheddar over the two slices.
04 - Spread chopped kimchi evenly over the cheese. If desired, sprinkle with green onions and toasted sesame seeds.
05 - Top with the remaining two bread slices, buttered side facing outward.
06 - Preheat a skillet over medium-low heat to ensure even toasting.
07 - Place sandwiches in the skillet. Cook each side for 3 to 4 minutes, pressing gently with a spatula until the bread is golden brown and the cheese has melted.
08 - Remove sandwiches from skillet, let rest for one minute, then slice in half and serve warm.
